Storage tips
Place the larder in a cool, dry spot away from direct sunlight. Do not store strongly scented products (washed-rind cheeses) together with delicate fruits (strawberries, peaches) — aromas transfer. For dried meats and charcuterie, prefer hanging them on a hook fixed at the top of the unit rather than laying them flat on the shelf.
Maintenance
Wipe the interior walls with a cloth lightly dampened with vinegar water to neutralise persistent odours. The aluminium mesh can be cleaned with soapy water and a soft brush. Do not immerse the unit. Beech can be oiled annually with food-safe oil to maintain its natural appearance.

Place a sheet of kraft paper or a clean cloth on the shelves — this absorbs residual moisture from cheeses and makes weekly cleaning easier. For soft-rind cheeses (camembert, brie), leave them in their original box to prevent the ammonia from the rind from spreading throughout the unit.
